Moin Moin

Serves 4-6 people.

  • 1 lb. white beans, ground
  • 1 medium yellow or red onion
  • 2 medium red bell peppers
  • 2 medium habanero peppers
  • 1 cup palm oil or vegetable oil
  • 2 eggs
  • Salt to taste
  • 2 Knorr or Maggi cubes
  • Garnishes: diced boiled eggs, corned beef, and/or flaked smoked fish (optional)
  • Warm water
  • Aluminum foil

  1. Mix 1 cup of warm water into ground beans stirring to remove lumps. Let purée sit for 15-20 minutes.
  2. Liquidize purée in blender with peppers and onion, adding water as needed, until smooth but thick.
  3. Fill a steamer with water and bring to boil. Alternately, lay foil in a pot to create a false base.
  4. Stir palm oil and eggs into bean purée, add salt and Knorr/Maggi cubes to taste. Add warm water a little at a time while stirring until mixture coats the back of a wooden spoon.
  5. Stir in garnishes if desired.
  6. Wrap small quantities of purée into tightly-sealed pockets of foil, arrange pockets carefully in the pot of boiling water, cover with a tight-fitting lid to prevent steam from escaping. Steam for 1 hour or until cooked, adding water if pot dries up.
  7. Pockets should be firm to the touch when fully cooked.
  8. Serve with custard or pap (corn starch porridge).
