Moin Moin
Serves 4-6 people.
Ingredients
- 1 lb. white beans, ground
- 1 medium yellow or red onion
- 2 medium red bell peppers
- 2 medium habanero peppers
- 1 cup palm oil or vegetable oil
- 2 eggs
- Salt to taste
- 2 Knorr or Maggi cubes
- Garnishes: diced boiled eggs, corned beef, and/or flaked smoked fish (optional)
- Warm water
- Aluminum foil
Directions
- Mix 1 cup of warm water into ground beans stirring to remove lumps. Let purée sit for 15-20 minutes.
- Liquidize purée in blender with peppers and onion, adding water as needed, until smooth but thick.
- Fill a steamer with water and bring to boil. Alternately, lay foil in a pot to create a false base.
- Stir palm oil and eggs into bean purée, add salt and Knorr/Maggi cubes to taste. Add warm water a little at a time while stirring until mixture coats the back of a wooden spoon.
- Stir in garnishes if desired.
- Wrap small quantities of purée into tightly-sealed pockets of foil, arrange pockets carefully in the pot of boiling water, cover with a tight-fitting lid to prevent steam from escaping. Steam for 1 hour or until cooked, adding water if pot dries up.
- Pockets should be firm to the touch when fully cooked.
- Serve with custard or pap (corn starch porridge).
